When my wife and I started making pasta as TRULLI PASTA, we were looking for a way to recreate my mom’s recipe: 100% Durum Semolina and 100% Eggs, without the aid of Water.
The only way we could achieve the same results, on a larger commercial scale, was to drastically reduce our production to enable the Durum Semolina to be hydrated properly, keeping and respecting my mom’s HIGH STANDARDS!
